Meditation is the Moravian version of Belgian Oude Geuze, which is created by combining young and old lambic. In our case, we use one-year-old, two-year-old, and three-year-old lambic. The older ones are dry and have a very distinctive taste. The young ones are mild and contain the sugar needed for the beer to ferment. No other beer reflects the personality of the blender who selects the barrels and the proportions in which they will be blended. Each vintage is slightly different (similar to wine vintages) and the beer is ideal for longer storage.
