Blanc de Brute from Wild Creatures Brewery is a unique White Grape Wild Ale, created by combining spontaneously fermented brews and white grapes. This beer, with 9.0% ABV and 17° alcohol content, is a blend of two-year-old brews that have spent more than a year together with selected varieties of Pinot Blanc and Solaris grapes from local vineyards. The result is a delicate and harmonious taste that combines the best of both worlds – wine and beer.

Beers enriched with white grapes are not very common on the market, and that is what makes Blanc de Brute so special. The long maturation process in barrels, partly with grapes, gives it a refined and sophisticated taste. With the first sip, you will feel a hint of the beauty of the Mikulov vineyards. Blanc de Brute is a beer that is not afraid to cross the boundaries between beer and wine, and its deliciously vinous character will appeal to even the most demanding gourmets. Its very fine effervescence adds another dimension.

Wild Creatures
Jitka tasted her first spontaneous beer sometime at the beginning of the new millennium and immediately fell in love with these beers. A few years later, in 2011, she brought her enthusiasm for lambics to her husband's brewery, and the foundations of the Wild Creatures brewery were laid.

Just like Belgian lambic, we only brew our beers during the cold months. We cool the wort (inoculate it) in a coolship, where it is exposed to local microflora, which we call "Wild Creatures" at the brewery. These microorganisms create the character of our beers. Since the brewery is located in the middle of vineyards, our beers have a more pronounced wine character compared to Belgian lambic.

We then store the wort in wine barrels that we brought from France. And then we wait. For our wild ales, we wait six to nine months, roughly two years for spontaneously fermented beers, and even longer for beers that we label as Reserve. We create the final taste of the beer by blending (mixing) different barrels. Each barrel is different and all of them need to be checked regularly. With almost two hundred barrels, this is a pleasant but quite demanding task.
