After the harvest, the berries are gently pressed to gain the most delicate mosto yema, the forerunner. These musts are now traditionally fermented, the young wines carefully subtracted and to an alcohol content of about 15% vol. before they are fed into their own Tio Pepe-Solera for their average five-year maturity. In the large 600l oak barrels, the wine forms on its surface a natural, about 1-2 cm thick yeast layer, the so-called Flor, which closes it airtight throughout the maturation period, it supplies at the same time with important nutrients and gives it its characteristic fino-bouquet and gives the unmistakable, dry aromas. In 1849 Manuel María González created his sherry house brand Tio Pepe. The name was a homage to his uncle José de la Pena (tio = uncle), who supported him a lot and stood by him for many years with help and advice. Today, Tio Pepe has found his lover in over 150 countries around the world and is one of the best-selling finos in the world.

The Macallan 12 Year Old Sherry Oak Single Malt Whisky 70 cl / 40 % Schottland The 12-year-old classic of the Macallan distillery matures exclusively in Oloroso sherry barrels. The Old Sherry Oak Whisky spends its 12-year undisturbed aging in Oloroso sherry casks and is the classic of the Macallan Distillery. The barrels are made from the air-dried wood of Spanish trees, which are then filled with the world-famous sweet wine from Jerez for 18 months before making their way to Scotland. The distillery spares no effort in this respect and spends a proud budget for the exclusive production of the casks - which also explains the higher price of the Sherry Oak whiskies. Ultimately it is the barrels that transform Macallan's "New Make Spirit" fresh from the distillery over the years into a single malt with an aromatic mix of dried fruit, oak and spices.To ensure that Macallan Whiskies taste the way they are meant to taste, a six-person Whisky Mastery Team, led by Stuart MacPherson and Kirsteen Campbell, is working to make sure that Macallan Whiskies taste the way they should.
