Es dauert etwa 12 Monate, um die Mischung eines Lillet auszuarbeiten. Dabei werden jedes Jahr die schönsten Früchte und Obstschalen für die Likör-Mischung ausgewählt - süße Orangen aus dem Süden Spaniens, bittere Orangen aus Haiti, grüne Orangen aus Marokko und Tunesien, Cinchona-Rinde (Chinin) aus Peru usw. dann die Früchte und Schalen separat in Alkohol mazeriert, so wie im 19. Jahrhundert. Nach 4 bis 6 Monaten, wenn die maximale Extraktion aufgetreten ist, wird daraus der Likör gebrannt, dessen besondere Chinin-Note einen leichten und eleganten Hauch von Bitterkeit enthält, die angenehm den Appetit stimuliert. Der Lillet-Winzer verbindet die Mischung aus Wein und Frucht-Likör langsam in einem großen Bottich, bis es perfekt homogenisiert. Wie bei jedem guten Wein, reift Lillet in Eichenfässern für 6 bis 12 Monate, um seinen aromatischen Duft und reifen Gaumen zu erhalten. Für die perfekte, konsequente Ausgewogenheit blenden die Winzer junge Jahrgänge des Lillet für frische Fruchtigkeit mit der Reife und Konzentration älterer Jahrgänge. Es ist eine magische Alchimie. In diesem vereinen sich zwei sehr unterschiedliche Merkmale, der Winzer schafft etwas ganz Neues, ein Wein mit kandierten und fruchtigen Noten und einem reichen, sinnlichen Geschmack, der erfrischend und voll auf der Zunge.
