A composition of 4- and 5-year-old ex-bourbon and ex-Oloroso sherry casks, with a higher sherry casks compared to Machir Bay.The story of the Kilchoman distillery is told very quickly - their construction was only started in 2004 and at the end of 2005 production could start after some difficulties. On December 14, 2005, the first barrel was filled. Kilchoman is located just east of the homonymous village and was the westernmost Scottish whiskey distillery until Abhainn Dearg on the Isle of Lewis challenged her for this title. Kilchoman is a very small distillery. It only produces about 100,000 to 110,000 liters of pure alcohol. Only Edradour produces less - apart from micro distilleries like Loch Ewe. What is unique about Kilchoman is that all production steps are carried out here. This is how the distillery builds its own barley. This circumstance is probably due to the fact that is often read, Kilchoman would grow his own barley completely. This is not the case. To the approximately 100 tons of self-grown barley (which is incidentally 20-25 ppm), Kilchoman buys about 250 tons with 50ppm turfed malt from the Port Ellen Maltings. Here is the 12-year-old version with notes of vanilla, melon, banana and cinnamon. The Glendalough Distillery advertises its products, which are produced outside the village of Rothes on a tiny, wooded stream, as “Luxury Speyside Single Malt Whisky”. Previously, the range was characterized by reserve bottlings without age statements and vintage bottlings with year statements, which were considered a Glenrothes specialty. However, following the takeover by the Edrington Group (also responsible for The Macallan, Highland Park and The Famous Grouse), a radical change was in the offing. The reserve and vintage versions have been discontinued once and for all. Instead, the “Aqua Collection” and the “Soleo Collection” have been available since the end of 2018, whose whiskies are predominantly presented with an age statement. The infamous, rounded Glenrothes bottle has not been changed in favor of the high recognition value on the spirits shelf.
